Cutting Board (Edge Grain)
Overview of each wood we use:
Hard Maple
· Characteristics: Light-colored with a fine, tight grain and subtle figuring. Extremely hard and dense (Janka hardness ~1,450 lbf).
· Why we love it: The gold standard for professional cutting boards. It resists deep knife marks, wears evenly, and is highly sanitary due to its closed grain that doesn’t harbor bacteria easily. Excellent dimensional stability—it warps less than many woods.
· Best for: Heavy daily use, chopping, and general kitchen work. It will develop a beautiful patina over time.
· Care note: Very low maintenance; oil occasionally to keep it looking fresh.
Black Walnut
· Characteristics: Rich chocolate-brown heartwood with occasional lighter sapwood streaks. Medium density (Janka ~1,010 lbf) with attractive grain patterns.
· Why we love it: Offers stunning contrast and elegance. Food-safe (juglone concerns apply mainly to leaves/hulls, not the seasoned heartwood used in boards). Provides a nice balance of hardness and knife-friendliness.
· Best for: Serving boards, charcuterie, and presentation pieces where beauty is key. Works well in mixed-wood designs.
· Care note: Benefits from regular oiling to prevent drying; develops a warm glow with use.
Cherry
· Characteristics: Warm reddish-brown tones that darken beautifully with age and exposure to light. Softer than maple (Janka ~995 lbf) but with a smooth, tight grain.
· Why we love it: Gentle on knife edges while still durable enough for regular use. Its natural beauty and subtle figuring make it ideal for heirloom-quality pieces.
· Best for: Serving trays, lighter cutting tasks, and boards where aesthetics and a softer feel are priorities.
· Care note: May show knife marks more readily than harder woods—oil frequently to maintain moisture and color.
Teak
· Characteristics: Golden-brown with darker streaks. Naturally oily, highly water-resistant, and durable (Janka ~1,070–1,155 lbf).
· Why we love it: Exceptional moisture and mold resistance thanks to its natural oils, making it one of the most hygienic and low-maintenance options. Naturally antibacterial and rot-resistant.
· Best for: High-moisture environments, outdoor-adjacent use, or boards that see frequent washing. Excellent for serving trays and cutting boards alike.
· Care note: Needs less frequent oiling than other woods due to its built-in oils, but still benefits from maintenance.
Purple Heart
· Characteristics: Striking vibrant purple that can fade to brown over time with UV exposure. Very dense and hard (often exceeding 1,800 lbf Janka).
· Why we love it: Adds dramatic color and visual interest, especially as an accent or in mixed boards. Strong and stable when properly finished.
· Best for: Decorative serving pieces and accent strips rather than primary heavy-cutting surfaces (its extreme hardness can dull knives faster). A conversation starter in any kitchen.
· Care note: Apply UV-protective food-safe finishes if you want to preserve the purple color. Some people experience mild sensitivity to the dust during making, but finished boards are safe for food contact with proper sealing.

General Care Instructions for All Our Boards
